Roasted Red Onion and Pear Salad

I was served this salad at a dinner Friday night. The combination of roasted red onion and pears, plus the cheese, was really great:

Place rack in center of oven and heat to 400 degrees.

Peel one very large red onion and cut into wedges, and then cut wedges in half. Place in baking pan. Mix 2 Tablespoons oil, a dash of salt and pepper, and drizzle over onion. Bake until soft, about 15 minutes, stirring half way through.

Dressing:
2 Tablespoons orange juice
1 Tablespoon lemon juice
1 teaspoon Dijon mustard
1 teaspoon honey
6 Tablespoons vegetable oil
salt and pepper.

Mix and store in a shakeable container.

Salad:

One head Bibb lettuce, divided among six salad plates
Top lettuce with about 8 cups spinach leaves
2 ripe pears, cored and chopped into chunks, divided 6 ways.
Top each salad with goat cheese, sliced almonds and dried cranberries
Drizzle with dressing and serve.
