CHILI RELENOS

I got this recipe from a lady in knew in Los Alamos (Anna Chavez).  Her daughter went to school with one of mine.  I used diced chiles since that's what I had and it worked really well and was easy.

1 lb. ground beef
½ c chopped onion
1 tsp salt
½ tsp pepper
2 - 4 oz cans whole green chiles (I used diced)
1 ½ c shredded cheddar cheese
1 ½ c milk
¼ c flour
4 eggs, beaten

Brown beef and onion, drain.
Sprinkle with salt & pepper.
Cut chiles in half lengthwise.  Arrange half of them in 10x6x1 ½ in baking dish.
Sprinkle with cheese and meat.  Lay remaining chiles over meat.  Beat together milk, flour and eggs until smooth and pour over.
Bake uncovered at 350 for 45-50 minutes until knife comes out clean.
Let set 5 minutes before serving.
Cut into squares.
