We had Carma come over so we could watch her make her famous cookies so this recipe follows her method. I tried making them before we watched her make them and it flopped. So I suggest you follow the directions. I won't guarantee how they'll turn out at a different altitude (my daughter at sea lever hasn't been able to have them turn out).
Mix together:
1 3/4 c butter, softened (don't melt)
1 c brown sugar, packed
1/2 c white sugar
Add & blend:
1 1/4 tsp vanilla
2 eggs
Add & blend:
1/2 c oat bran
1/2 c unsweetened coconut (health food store)
2 c instant oatmeal (the 1 minute kind)
Add & mix:
1 c chopped pecans
1 c finely chopped dates or raisins. Best to cut dates with scissors. Carma used dates.
Mix with part of flour.
Sift together a few times in a separate bowl:
rest of the 2 cups flour
1 tsp baking soda
2 tsp baking powder
Blend all together with hands.
Add
1 cup milk
chocolate chips
Bake a few to check--try 8-10 minutes; might need to go longer.
Bake 350.
Form into large ping pong ball size. Flatten. Let sit on sheet a few minutes after removing from oven.
