I haven't tried this yet but it looks good.
6 potatoes,
baked & slightly cooled
1-1/2
tsp salt
¼ tsp
pepper
¼ c
butter, softened (or melted)
2 c
shredded cheddar cheese, divided
1
cup warmed milk
½ cup
sour cream
5
green onions, finely chopped (save a few for the top)
bacon
for the top
Slice
potatoes in half lengthwise and use a spoon to scoop out inside into a bowl. Add salt & pepper, butter, & 1-cup cheddar cheese.
Beat
well.
Add
milk. Beat until fluffy and cheese
is melted.
Stir
in sour cream and green onions.
Spoon
into a 9x9 slightly greased baking dish and baking dish.
Top
with remaining 1-cup cheese, onions and bacon.
Bake
at 375 uncovered, for 15 minutes until heated through and cheese melts and is
bubbly.
