Cut asparagus or broccoli into 1 inch pieces and cook (steam
or sauté or whatever you desire) until tender crisp. You can peel the stalk of broccoli and use all of it, not
just the flowerets.
Dice raw chicken breasts or use shrimp (I’ve never tried
shrimp, only chicken and broccoli).
Sauté chicken in butter with lemon juice, chopped green onion, and
garlic.
Grate 2 c parmesan (1/2 lb) with 1 cube butter (a food
processor is good here) and add ¼ c whipping cream (or heavy cream) and dash of
garlic powder. ( actually don’t
use the heavy cream but some sort of milk instead to lighten it up).
Put the cheese into the hot, cooked pasta and mix to
melt. Add the cooked chicken and
veggies and serve immediately.
